Easter cake with honey

Sweet pogača or gnijezdo, sirnica or pinca, varies in names and ingredients, but what does not change is its smell and presence every year on the Easter table, which is why it is one of the symbols of Easter. Soft yeast dough is the basis that we learned from our mothers and grandmothers, and playing with ingredients such as vanilla, citrus fruits or honey affects the smell that will fill your home on Easter. INGREDIENTS

  • 100 ml of milk
  • 500 g plain flour
  • 40 g fresh yeast
  • 4 egg yolks
  • 150 g Apimel honey of your choice
  • A spoonful of sugar or vanilla sugar
  • 1 vanilla pod (to taste)
  • Grated lemon and orange zest
  • Juice of 2 oranges
  • 1 handful of raisins
  • 0.5 dl rum
  • 125 g softened butter
  • A pinch of salt
  • For the coating: 1 egg yolk and 2 tablespoons water

PREPARATION

1. Prepare the yeast in lukewarm milk with 2 tablespoons of flour and a tablespoon of sugar.

2. In a large bowl, prepare the flour with all the other ingredients. After mixing all the ingredients, finally add the risen yeast to the bowl.

3. Continue to knead the ingredients mixed with the yeast with your hands until the mixture begins to separate from the sides of the bowl.

4. Leave the dough, shaped into a ball, in a warm place until it doubles in volume.

5. After 60 minutes, knead the mixture and leave it for an additional 60 minutes to double again.

6. Divide the dough in half or into 4 pieces, depending on the size of the loaf you want, and let the dough rise for another 20 minutes.

7. Brush the scones with a mixture of egg yolk and two tablespoons of water.

8. Place one by one in a preheated oven at 160 °C for about 20 minutes. Check with a toothpick whether the cake is done.

9. After baking, let the cake cool slightly and then cut it.

TIPS:

1. If you see that the cake is darkening too quickly, cover it with aluminum foil or reduce the temperature slightly.

2. Soak the raisins in water or rum beforehand to soften them, and instead of raisins, you can use cranberries or other candied fruit.

3. Before baking, you can cut the cake into a cross shape or sprinkle it with large sugar crystals, as is traditionally done for Easter.

4. For a rich aroma and flavor, use a vanilla bean, the inside of which is scraped out and mixed with the other ingredients, and the bean is boiled with milk.
