- 2 eggs
- 250 g powdered sugar
- 750 g flour
- 1 teaspoon of salt
- 1 teaspoon of baking soda
- 1/2 teaspoon baking powder
- 250 g butter
- 2 teaspoons ground cinnamon
- 2 teaspoons of minced ginger
For decorative snow:
- 2 egg whites
- 450 g powdered sugar
- 1 lemon – juice
For gluing:
- 225 g sugar
Everything else:
- sugar decorations
- candies
- food coloring
PREPARATION
- Mix the flour, salt, baking soda, baking powder, ground cinnamon and ground ginger. In another bowl, cream the butter and sugar until light and fluffy, add the eggs and finally the honey that you have previously warmed. Once everything is combined, add the dry ingredients and gently mix until you have a smooth dough.
- Wrap the dough in foil and leave it in the refrigerator for 24 hours. It can be kept like this for up to ten days.
- When you take the dough out of the fridge, roll it out to a thickness of 5 mm (you can roll it out thicker if you want). Based on the size of the rolled out dough, determine how big you want your house to be. Draw the sides of the house on plain paper to make a template (4 sides, 2 roof panels, doors and windows if desired; don't forget to cut out the holes in the sides). Preheat the oven to 180 °C and in the meantime, cut out the panels for your house.
- Carefully place the dough pieces on baking paper and transfer to the baking trays. Bake each piece for about 10 minutes or until golden brown. When done, leave them to cool on a flat surface to prevent them from warping.
- We use melted sugar as the “glue”. Melt the sugar over low heat until it turns a light brown color. Don't let it get too dark or it will taste bitter, and be careful not to burn yourself.
- Transfer the melted sugar to a cold bowl to the side so that it does not continue to heat up. Brush the sides of the cooled dough pieces with the sticky liquid and join the pieces together. You can place cups next to the sides to hold them in place until they are firm.
- For the snow for decoration, beat the egg whites until they are white but not stiff. Mix in two tablespoons of powdered sugar and lemon juice until creamy. Gradually add the remaining powdered sugar, until the mixture is soft and white. If it is not stiff enough and does not hold its shape, add more powdered sugar.
- Sprinkle the mixture with a spoon on the roof so that it looks like snow, and you can decorate the windows, doors, and walls using a decorating bag.
ADDITIONALLY:
- If you add edible coloring to the snow mixture, you can make additional decorations such as a green wreath on the door, red flowers, and the like.
- You can, but don't have to, lightly dust the finished house with powdered sugar. You can also use sticky sugar to stick candies, candy canes, and other edible sweets you like onto the house.
- If you have any leftover dough, use it to make small gingerbread cookies in the shape of hearts, stars, pine trees, reindeer, snowmen, and anything else you can think of. You can decorate them with leftover snow for decoration in white or another color.
