Gingerbread men

INGREDIENTS

  • 750 g flour
  • 1 baking powder
  • 5 g minced ginger
  • 3 g ground nutmeg
  • 2 g cinnamon
  • 205 g butter at room temperature
  • 235 ml Apimel honey
  • 220 g brown sugar (the darker the better)
  • 120 ml of water
  • 1 egg
  • a few drops of vanilla flavoring

Ornamentation

  • 2 egg whites
  • approx. 250 g powdered sugar
  • juice of half a lemon
  • edible colors

PREPARATION

Mix the flour, baking powder, ginger, nutmeg and cinnamon well in a bowl. Mix the butter, honey, sugar, water, egg and vanilla with a mixer until you get a homogeneous mixture. Add the flour mixture little by little and knead the dough in the bowl. The dough will be crumbly and separate, but that's how it should be. Divide the mixture into three equal parts, wrap each in foil and refrigerate for at least three hours. This is very important so that you can roll it out nicely later. Then line the baking sheet with baking paper. Flour the surface on which you will roll the dough well, as well as the dough, rolling pin and molds so that they don't stick and that you can separate them from the surface. Place on the baking sheet and in the oven preheated to 175 degrees for ten minutes. Do not overcook them, they must still be soft when you take them out. Cool them well before decorating. Ornamentation: Beat the egg whites well, stir in the powdered sugar and lemon juice. Divide into 3 bowls and add one food coloring to each. Place each in a plastic freezer bag, cut a small hole and start decorating the completely cooled cookies. Leave overnight to harden.
